Anyone that knows me well knows that I am a very picky eater. That has made dealing with gestational diabetes even more difficult for me. I am so very thankful to have a supportive family to help encourage me. Grant has been great about trying to follow a similar diet as me and has really helped me make meals that are high in protein and lower in carbs.
For my diet I basically monitor my carbs and try to eat lots of protein. To break it down I can have 15-30g. carbs in the morning 30-60g. for lunch and supper and 15-30g. for two snacks during the day. I have to check my blood sugar first thing when I wake up, after breakfast, lunch and supper. I try to eat a lot of protein with each meal and have the above foods for snacks and breakfast. I have been feeling pretty good about my diet. I know it could still be better but it's what has worked for me.
